Try A Healthy Cake Recipe This Summer

It’s always nice to cap a good meal with a nice dessert.  I like to have a cake and pair with a freshly brewed coffee and eat it slowly.  Enjoy every sip and every bite of the cake.  Actually there are healthy cake recipe that anyone can try.

I tried baking a carrot cake, but it did not turn out too well.  So I got back to my good old coffee house where cake desserts are so plenty and nicely done also.  But if you are interested in trying a healthy cake recipe, here are some.

Pineapple Blueberry Crunch Cake

Ingredients

    * 3/4 cup butter, plus more for dish
    * 1 (20-ounce) can crushed pineapple, in juice
    * 1 (20-ounce) can blueberry pie filling
    * 1 (18.25-ounce) box yellow cake mix
    * 1 cup chopped pecans

Directions

Preheat oven to 350 degrees F. Butter a 13 by 9-inch casserole dish.

Melt 3/4 cup butter in saucepan over low heat.

Pour the pineapple with juice into the casserole dish and evenly spread blueberry pie filling on top. Cover with dry yellow cake mix and top with pecans. Drizzle with melted butter and bake for 35 to 45 minutes.

Ingredients

    * 6 (1-ounce) squares bittersweet chocolate
    * 2 (1-ounce) squares semisweet chocolate
    * 10 tablespoons (1 1/4 stick) butter
    * 1/2 cup all-purpose flour
    * 1 1/2 cups confectioners’ sugar
    * 3 large eggs
    * 3 egg yolks
    * 1 teaspoon vanilla extract
    * 2 tablespoons orange liqueur

Directions

Preheat oven to 425 degrees F.

Grease 6 (6-ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla and orange liqueur. Divide the batter evenly among the custard cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert onto dessert plates.

This is a healthy cake recipe that will definitely entice the most anti-healthy type of person. Just don’t tell them it’s a healthy cake!

Chocolate Filled Healthy Dessert Recipes,

Saying you had a nice hearty and healthy meal, but suddenly you start craving for sweet chocolate dessert.  And let’s say you are watching your diet but it’s been a month since you had chocolate, will you give in? 

Well, who said chocolate is unhealthy?  You can have anything but be sure to have them in moderation,  that’s the right way to eat.  Try healthy dessert recipes if you are a dessert loving person.  You can always ask the waiter or check the menu yourself.  I am sure by now you know how to pick what’s good for you.

But here are some healthy dessert recipes, if you don’t mind.

Chocolate Chip Cookies

Makes about 2 1/2 dozen cookies

3/4 cup rolled oats
1 cup whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, softened
1/4 cup canola oil
1/3 cup granulated sugar
1/3 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup chocolate chips

1. Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.
2. Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.
3. Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

Baby Tiramisu

Makes 6 servings

1/2 cup nonfat ricotta cheese (4 ounces)
2 tablespoons confectioners’ sugar
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
12 ladyfingers (about 1 3/4 ounces)
4 tablespoons brewed espresso or strong coffee, divided
2 tablespoons bittersweet chocolate chips, melted (see Tip)

1. Combine ricotta, sugar, vanilla and cinnamon in a medium bowl.
2. Place 6 ladyfingers in a 9-by-5-inch (or similar size) loaf pan. Drizzle with 2 tablespoons espresso (or coffee). Spread the ricotta mixture over the ladyfingers. Place another layer of ladyfingers over the ricotta and drizzle with the remaining 2 tablespoons espresso (or coffee). Drizzle with melted chocolate. Refrigerate until the chocolate is set, about 30 minutes.
