My kids love Mac and cheese. It is the only thing my 3 year old will eat. But the boxed varietys are full of unneeded things. Also is there any recipes out there that contain no soy, milk, or wheat?

You can get frozen low-fat mac and cheese, its easier to make than the packet stuff – just whack it in the microwave and presto.
Recipes without soy, milk or wheat:
* Roast vegies (potato, pumpkin, sweet potato, zucchini)
* Steamed vegies (peas, corn, beans, carrot, broccoli)
* Steak/sausages with mash potato and gravy
* Chicken or veal parmigana without the cheese
* Stir fry asian vegies with oyster sauce
Chicken Dijon
Ovenbaked chicken pieces and fresh garden vegetables smothered in a creamy mustard sauce, served with a wild rice combination.
Apricot Chicken
Succulent chicken fillet topped with a delicious apricot sauce and served with potato gratin and vegetables.

Ultra Healthy Dairy Free Macaroni and Cheese Recipe:
1 pound artichoke, semolina or whole wheat pasta shells
1 large onion, chopped
1/4 cup canola or olive oil
1/2 cup whole wheat pastry flour
6 cups water
3 Tbsp “Bragg Liquid Aminos”
1 Tbsp garlic powder
1/2 tsp turmeric, ground
2 tsp sea salt (optional)
1 3/4 cup nutritional yeast flakes
12 ounce package soy mozzarella or rice cheese, shredded (vegans, check the label to make sure the “cheese” has no casein)
12 ounce package tofu hot dogs, sliced (optional)
1/2 tsp paprika
3 cups corn flakes, organic preferred
Directions:
Spray 10 X 15 inch glass Pyrex casserole dish.
Cook pasta according to directions, or until al dente. Drain and set aside.
Saute onion in 1/4 cup canola or olive oil until it just starts to brown.
Stir in whole wheat pastry flour to make a paste and add 2 cups water slowly to thicken.
Add the remaining water, Bragg’s, garlic powder, turmeric and salt. Heat on low until it comes to a boil.
Using a whisk, add nutritional yeast flakes until well blended.
Remove from heat and stir in shredded soy or rice “cheese”. Mix until “cheese” is melted.
Stir pasta into sauce, add sliced tofu “hot dogs” and pour into a greased 10 X 15 inch casserole pan.
If this is going into the freezer, stop now. Cool completely, cover with plastic wrap and aluminum foil and freeze. Want it tomorrow? Defrost and thaw completely in the fridge overnight. Uncover, sprinkle with paprika and top with corn flakes. Spray a clean piece of foli and cover again. Bake for 40-45 minutes or until bubbly.
If this casserole is for tonight, sprinkle with paprika and top with corn flakes. Do NOT stir into casserole.
Bake at 350 degrees F for 30 minutes or until bubbly.
Buy a crusty loaf of bread, make a garden salad and dinner is served!
Makes 10-12 servings.
how do you make cheese without milk?
uhhh, you may have problem making macaroni and cheese without the main ingredients (cheese and pasta). But if you want a healthier mac and cheese with the pasta and cheese, look up recipes that hide veggies in there, like the ones that Jerry Seinfeld’s wife wrote. I know one day I crossed path’s of a recipe hiding a veg in mac and cheese and it looked pretty good, but I don’t remember where!
if you make it homemade it can be healthy. The blue box is only labeled as “unhealthy” because of its MSGs and preservatives in the artificial cheese. The pasta is fine!
But if you want to take it a step further, make your homemade with whole wheat noodles. It shouldn’t alarm the kids because they’ll be covered in the sauce. Try a baked version using real cheese and cream (you can use low fat versions of each to cut the fat grams). Mac n’ REAL CHEESE isn’t bad for you! just serve it with some meat and veggies.

I boil a pound of noodles, drain. Add 1/2 stick of butter, 1 cup of milk (substitute water) and add Velveeta cheese – about 1 pound. Mix well. Very cheesy and easy.
You might also try the health food stores for milk and cheese alternative and substitute those in the recipe.
Low Fat Mac n Cheese
Made with low-fat cheese, skim milk and whole wheat flour, you can make your favorite comfort food without the guilt.
Ingredients
1 1/2 C. macaroni, cooked and drained
1 small onion, chopped
9 slices, 2/3 oz. each low-fat sharp Cheddar cheese
1 12 oz. can evaporated skim milk
1/2 C. low sodium chicken broth
2 1/2 Tbs. whole wheat flour
1/4 tsp. Worcestershire sauce
1/2 tsp. dry mustard
1/8 tsp. pepper
3 Tbs. bread crumbs
1 Tbs. margarine, softened
Directions
In deep 2-quart casserole dish, sprayed with vegetable cooking spray, layer 1/3 macaroni, 1/2 onion and cheese. Repeat layers, ending with macaroni. Whisk milk, broth, flour, mustard, Worcestershire sauce and pepper until well blended. Pour over layers. Mix bread crumbs and margarine. Sprinkle over casserole. Bake uncovered at 375 degrees for 30 minutes until hot and bubbly.
Yield: 4 servings
